NodeMCU style boards are pretty cheap, how about buying one, unsoldering the ESP-12 and in its place soldering/gluing on a 4x2 header socket with the wires connected to the pads where the ESP-12 used to be so you can then plug your ESP-01s into the socket.

Johan Kanflo came up with a very clever carrier board, see http://johan.kanflo.com/a-versatile-esp ... ent-board/ . Especially the solderless adaptor for ESP-12 using pogo pins is very slick!
