You are right. I too faced with resets while enabling STATION_MODE. Spend a lot of time with gdb with no results. Finally put .1uF + 100uF as close as possible. Now things are perfect :D .

I haven't added any caps after the Hi-Link AC to DC adapter, could this to be the cause of my AM2302 temperature and humidity sensor dye after about 2 - 3 months of usage, the bellow protoboard worked for almost an year, ESP is running just fine but in all this time I changed the sensors twice, now I wanted to change the sensor with an HTU21D to see if this one lasts more.

Are the missing decoupling caps the cause of my issue ?

I don't think that will cause the sensor to fail. I have read that those sensor can fail after a little while.
