Its best to have the esp connected to your network so that you dont have to switch wifi networks all the time. It is also prety easy to make a php script or other script that can controll the devices on the network. This is also more secure as you can use https on your web server and only need to port forward 1 port.

Thanks for the advice Michael, however I really want to make this a stand alone system with two (or more) EPS's talking to each other. I am sure this can be done - I just have to work out the best way to do it.
