So, something like 100uF can be fine, but 220uF or even 470uF is better, depending the space available.
Ceramic is recommended, but if you use big 470uF, you won't find any in ceramic, they only comes as electrolytic. You can combine 2 caps in parallel also, one 47uF ceramic and one 100uF electrolytic.
The voltage is not really important, since ESP is running at 3.3V, so capacitors rated at 6.3V are Ok, but if you have 10V or 16V handy it will be fine also, only that it will take more space.
