If you put a sequence number in the data of the UDP packet, you will easily see what packets are lost.

My tests were through a router. Both in station mode. I don't think it matters. I wonder if signal strength could be the problem.

I have already tried to change the transmit power. But that doesn't affect the delays / frame drops.

I have the same delays with my windows PC as with my iPad, so it must be a problem with the ESP.

I am going to try, if there is a change if I turn off all the WiFi APs around, but as I stated before, there is only one AP which has a good signal, and 2 others which are very very far away and have a weak signal.

So, I turned off all WiFi stations. And the problem persists.

Have a look at the screenshot of Wireshark, it is very strange, that a few frames are received very very quickly, with almost zero delay, then there is a big delay.
