I also see 2 variants. One uses I2c (4 pins) and the other SPI (6 pins). I've never used either but it appears I2c is easier to interface. Is there a reason to use SPI?

There is no real reason to choose SPI other than transfer speed which is useless for small sensors.
Speed transfer for LCD it is worth.

As stated below. The BME280 is the sensor with humidity and temperature. I bought some SHT30 to try out.

Careful, that sensor for $0.75 is the BME280 (pressure only). Aliexpress does have the 4-pin BME280 for a better price than ebay but for some reason charges shipping on orders over 1 (free for a single though). I ordered 6 6-pin sensors this morning that are supposed to support both I2C and SPI.
