Maybe something like this for a boost supply to use a Lithium coin cell?

I'm not sure if a coin cell would work at all. According to http://www.ti.com/lit/wp/swra349/swra349.pdf , you should expect a max current draw of 30mA or so max from a CR2032.

Thanks for the info - would this circuit work with 2x1.5v AAA batteries?

Aren't these big current spikes quite short? Wouldn't they come out of the capacitor?
