I cannot find anything in the datasheet about "mesh".

Maybe i have a bad translation. Can you please link the datasheet for the ESP8266 containing the word "mesh"?

I think it means that it can be used as part of a mesh network. Say you have a Zigbee mesh and want to connect that network to internet, then you can use ESP8266 as a bridge.
