Those ESPs are power hungry.
For pullups, both 4K7 and 10K are both Ok, simply use the ones you have in stock.

Pin 1 is input 5V, Pin 2 output 3.3V and Pin 3 ground right? Can you help me please, because I'm not familia with those datasheets.
Is a capacitor necessary or would you recommended?
Do I have to connect RST or just if I want to use it?

That's a triac, not a voltage regulator.
Common part numbers for linear voltage regulators are AMS1117, 78L33, LM1086 or LM317. Make sure you either get the 3.3V or adjustable output variants, as most of them are available with a large range of output voltages.
