I understand that your ESP devices get their IP address from the DHCP server on the WiFi network, do they? And you configured that DHCP server to reserve a fixed IP address for each MAC address of the ESP devices, did you? Now, can you somehow debug the DHCP exchange between the ESP and the router?

the symptoms might suggest that your sketch is overwriting the string containing your fixed IP address ?
