ESP8266 project

I have been trying to deploy a wireless network wherein I use a NodeMCU ESP8266 chip to get three parameters in real time and display them on a website using graphs.
I am new to this and I am confused as to which one is better - Lua Programming or programming the chip through Arduino IDE.
Also, how to display the data in form of graphs on a website?
Any kind of advice, suggestion or help is appreciated.
