ESP-01 and memory

I've noticed the older ESP-01 I have uses a memory much faster to write (Winbond).
Any idea on how to find and buy this chips with faster memory? It is even faster than 8285.

Are you sure its the chip speed that is the issue??

How was this determined exactly?
