Yea basically exactly what you said, we want to make a web server for it and watch from another location. I am not sure where I would start for that though.

Although, I'd punt the display, put a web server on the ESP8266 and just watch the plant from your phone, or desktop.

This is a great project to illustrate how easy it is to use my InqPortal library. Although, I didn't have a soil sensor, I did have another analog sensor that interfaces the same way as your soil sensor. Also note that it is using a NodeMCU that has the built-in USB. If you look closely at the picture of the NodeMCU, you'll see they just took your raw board and soldered it to the larger NodeMCU board making it easier to program and connect components to via a bread-board. https://www.esp8266.com/viewtopic.php?f=11&t=23633
