Circuit Symbols usually show the component energised - LEDs have arrow marks showing the light being emitted.

German standards require components drawn in their non actuated position (buttons not pressed and relay coils are not energized).

There are also IEEE standards that are slightly different. Like you pointed out its is all very ambiguous.
