I used a 4x 1850 Lipo pack with a solar panel, this then needs a charger board and LDO to drop the voltage to 3.3V. If you use a 5V sensor you make life a lot more complicated.
This setup ran for 3 months through the summer until the solar panel wasn't charging properly - was using deep sleep mode and transmitting every 15 min.
If you are in a country with more sun it would probably last the whole year.

I have since made an all in one pcb but have problems and have been side tracked onto other hobbies :o Retirement is looming so I should have more time.

Here this guy has built a very simple PCB for powering up ESP8266. It has a DC jack and a regulator IC.
