OK now I'm confused.

Typed in AT+CWLAP and it responded with a load of wi-fi access points found......

Typed in AT+CWJAP=ssid, password and got error

Typed the same but with the SSID and password in quotes and it went away, had a think and then came back with FAIL

What version of the AT firmware are you using? The version supplied with a lot of devices is early build and full of 'holes' and other interesting issues.

Yes, the quotes are needed. So, it seems to try connecting, but it fail for some other reason.
How long is your password (because there is an issue with too short password in the ESPs.
Also, personally, I got problem with space characters. If you have some, remove them.
