I'm experiencing a solar powered probe ... which need by definition a good exposition to sun light.
Is dangerous for an ESP to be exposed to about 50°C difference in a day ?

That would be the module temperatures and not the ambient air.

While you may be within the temperature rating for the device one thing you should try minimise is higher rates of change. Slow expansion and contraction will cause less stress compared to more rapid changes. If possible don't have the enclosure exposed to direct radiant heat. Avoid direct sunlight, keep the enclosure shaded. Insulating a hotter surface would be desirable if there is one.
