Is there another zip library I can download in order to work on the NodeMcu eeprom?

I used the EEPROM library like you EEPROM.h, but I used the function EEPROM.put instead of EEPROM.write to store data.

#69952 EEPROM library is part of ArduinoESP framework, and it has that EEPROM.begin(int size) function : ... PROM.h#L34

You probably not selected an proper ESP board ...
Turn ON verbosity in Preferences, and check all the gcc commands and arguments, you will see all the include paths.
